There's definitely some advantages to a surface table but I gotta say and even tho I write a dice app, if I could roll real dice I wouldn't give that up to have virtual 3D dice rolling about if everyone was sat around the same table. The not rolling off the edge solution seems to me to be a table lip.
Edit - watching it again. I dont get the orange plastic things. I thought they were part of the map but they are some kind of UI... I dunno. Not quite there yet. Heading in the right direction - maybe.
