I'd say the second, if you loose the drop shadow otherwise the third.

I'm going to be the odd man out and say that I don't like the second one as the style clashes with the parchment. My favorite is the third one but the first one is also not bad.
Check your settings on the export - could be that you are placing a matte around the image (white) and its picking that up. Often times if you go for transparency with .gif's they're finicky. I would suggest to you the .png format.I understand now what you meant by artifacts at the edges, Hoel. They don't appear when in photoshop format, so I don't really know why they show when i save as gif.
I agree, definitely save as .PNG rather than .GIF
