Lots of secret passages to get from one level/room to another without having to be seen. Especially one that goes from the bedchamber to another bedchamber for the king's uh....entertainment.
You also have to have a secret passage to exit the castle in case it is ever lost to invaders. Preferably near horses or a ship for a rapid getaway.

GM: "As you walk towards the kings throne you notice it has a big hole in the middle. As you get closer you notice a smell coming from it and a roll of parchment to the side of it."
Character 1: "Did somebody kill the king and stash the body down the hole"
Character 2: " That don't smell like no dead bodies. I've my my share of dead bodies, so I should know.
Character 3: "Hey this roll of parchment only has the word "Charmin" written on it."
