Lots of secret passages to get from one level/room to another without having to be seen. Especially one that goes from the bedchamber to another bedchamber for the king's uh....entertainment.
You also have to have a secret passage to exit the castle in case it is ever lost to invaders. Preferably near horses or a ship for a rapid getaway.

Don't forget the throne room, the banquet hall, the kitchen and food storage areas to feed the people in the banquet hall, a source of water in case of siege, and a guard post that watches the gate mechanism so that the alarm gets sounded when the daring rebel climbs the castle wall to let in his ragtag band of misfits.
As long as I can have an extensive library, I'll deal with the chamber pot...
