I think for a lite challenge you should have a 1-story structure with 1 to three rooms. Such as a tavern, chapel , farm house or other such. That us non skilled could focus on a small area with limited options instead of expansive concepts.

I completely agree Xyll. It would also gives us big thinkers (ie world-builders) a chance to do more intimate work...I've never tried encounter maps because I think my software limits me (ie this is a job for Dunjinni or Dungeon Designer) but maybe that's just an excuse I use.

Ascension, do a search in the tutorial forums for topics started by duvik. There's a good one in there about creating dungeon maps in Photoshop that you might find useful. I followed it for the Not Your Father's Dungeon challenge last year and had a good time doing it.
