That's precisely what I was going to suggest! They did a good job of recreating a lot of classic castles. If you fancy it, I'm sure you can pick up a cheap copy of stronghold 1 for next to nothing these days. They have most of the major UK castles already built in and you can zoom around them and get a good idea of the basic layout.
Man I lost so many months just sitting there in free create mode making castles in both Stronghold 1 and 2. Might have some of them lying around somewhere on the ole hard drive.
