Wip What is The Best Way to Map Multi-Floored Dungeons? Plus First Map Attempt

I am trying to create my own campaign set in a small medieval village and a castle overlooking said village. I have a very work-in-progress map of the village* but I am finding it difficult to map the castle because I don't know how lavish they were on the interior.

Does anyone know the best way to map interiors of multi-floored castles/dungeons?

Many thanks in advance, also could I have constructive criticism on the village map plus castle, as it is my first map I've ever created.

*Due to the file size being too big for the site, I am having to upload the village on an image sharing site then add the link: http://imgur.com/JvnOw6P

    Software used: pyromancers.com/dungeon-painter-online

Link to map-maker is there to help people know what I used to create the map
