Yeah, after digging through G.Projector, I thought maybe that or the stereographic two-hemisphere were the closest. As I said, always had kind of a soft spot for that projection for some reason but never knew which it was.
Those are some great images BTW. Hope we will get to see some more when you have a chance to post them.

The projection on that map should be Stereographic, not Nicolosi. The angles in the upper latitudes are wrong for Nicolosi, but right for Stereographic (shown below):
Stereographic also unprojects as expected (the map was a little twisted and I didn't want to fiddle with straightening it, so it's not quite perfect):

I love the old maps (have you ever heard of the carta marina?) because of the awesome sea monsters and the strange creatures and strange demigods in the borders. I know, kinda weird.
Stereographic is pretty common on older maps because it has some nice properties, of which the best is that it's easy to calculate and draw. I have also done that composite stereographic dual-hemisphere projection and am very familiar with its appearance.

This one came in recently and I just had to share it! It's from 1532 and, aside from being beautiful, is really interesting. It's not the kind of projection I would expect from this early, focusing on the poles, and even though it shows the Americas as genuinely the "West Indies" with Florida just along the coast from Catay, and the shape of Scandinavia is clearly still a mystery to the cartographer, it shows Antarctica complete with the larger and smaller landmasses (although it would need to be rotated for them to be in the right place). I just thought it was really cool!
I also came across these 1717 maps of Lima and St Salvador, which is Salvador in Bahia, the original capital of Brazil not, as I first thought, San Salvador in El Salvador.
The Werner projection is pretty nice, I agree.
Theses are all very cool. That world wide one is very interesting. Although i think that St. Salvador one is my favourite.
