Well, one of the first things to consider is how real natural caverns are already mapped.

This is mostly my fault for posting at 3:00 in the morning, and I've edited the title of the thread. I started off saying "realistic" but then realized halfway through my post that the kind of map I was looking for probably didn't have a real world analogue.
What I was looking for is something more akin to a top-down road map, that handled overlapping roads in 3 dimensions.
