So for better or for worse, I've 'finished' the example map from Mr. Curry's podcasts (up to #12). There are a bunch of things I'd probably try different, but just in learning masks, layers and some of the techniques, this was really a learning experience.
Thanks to RobA for the GIMP help. Much rep to you!
Now on to catch up to Mr. Curry's next podcasts and start putting his techniques to practice on my first game map - the Isle of the Lost Grave... o.O

Yup - my fear was starting to do that and I'd end up another 4 hours of 'cleaning up' (Not counting the 30 min of my life now gone trying to make the area behind the labels look nice... and failing miserably *chuckle*)
I'm off to try and use your tutorial on land creation to make my map of Lord British's Castle and Britain from Ultima I.

I usually just stick with outlining the labels with a contrasting colour:
- select the text layer and in the text tool hit the "Path from Text" button
- create a new blank layer below the text.
- select the paintbrush tool with a soft brush in a contrasting colour
- open the path dialog, and click "Paint along Path".
- select "Stroke with Paint Tool" using the paintbrush on the new layer.
- Adjust opacity/blend modes as required.
